My neighbor used to organize a big produce coop with her friends when she lived in Phoenix years ago. She was excited to finally get one started here with a few moms. Apparently she found a wholesaler here and got it organized to start shopping this week. We all put in $20 to start (that's every two weeks. We're hoping to get it down to $20 a month/just $10 every two weeks. She already said she thinks next time we'll be able to only pay $15 each.) and Tracy hit the market last night. She said they got way too much! An example of prices; they bought 116 oranges for $16.60 and the guy said prices aren't even at their best right now. They're supposed to come down in the next month or so.
Here's the pile I ended up with this morning:
Sawyer kept telling me "too much food Mom!".
So we took it out to count...
17 oranges
10 red delicious apples
8 big tomatoes
5 green peppers (two of which are HUGE)
2 bunches of broccoli
6 baker potatoes
5 GIANT onions (I will NEVER use that much onion)
4 fresh garlic
8 oz of mushrooms
8 oz of baby bella mushrooms
12 GINORMOUS I'VE NEVER SEEN SO BIG carrots
1 zucchini
10 bananas
2 big bunches of green leafy lettuce
2 big bunches of red leaf lettuce
1 bag red grapes
Is that a good deal? I really haven't broken down and priced what I spend on produce lately.
It seems like a good amount of produce for $20. There is so much and it's all so big and fresh and pretty!
Okay, so good veggie recipes anyone?
Especially for zucchini (I'm not a fan. Even in bread.) and the porta bella mushrooms...

Wow, that's a TON! Seems like a great deal to me, especially if you manage to eat it all. (We are bad and end up throwing out produce at times) Grapes alone are ridiculously priced right now.
I could make a lot of baby food with that :) Sounds like a really good deal to me.
I have a very yummy recipe for Tuscan Vegetable Soup that I've made twice in the past month. It has zucchini in it, but you can't really tell that's what it is. I can email you the recipe if you're interested.
I am totally jealous! I should look into a coop here, I know a ton of people would do it. I LOVE zuccini, but I like to eat it alone, not in stuff so no recipes for you. Have fun with all of that!
We sautee zucchini with onion, garlic and butter in the skillet. It looks like you have all of the supplies. Yummy.
