awesomely cool

So excited about the weather!!
Could Fall finally be here?
Yesterday it only got up to 80 degrees.
And.
We woke up this morning and it was *drumroll please....* ...51 degrees outside!
We were able to open our windows before going to bed last night and actually woke up COLD!!
Oh it was so nice to snuggle into my bed.

And it's only supposed to get up into the 60's for the whole rest of the week!!
Wed: sunny, high 63*
Thurs: sunny, high 65*
Fri: sunny, high 66*
Sat: sunny, high 68*
Sun: sunny, high 77*
Ahhh....

I know some of you may have been thinking I was being whiny when complaining about the heat around here last week... I should enjoy nice sunny warm fall days, right? (really though, isn't 92* downright HOT?!!) I just wanted to point out that we have not had ANY cooler fall days around here AT ALL. It has been hot all the way through September and for this first week and a half of October. Hot.
No crisp mornings; you walk outside and are sweating in the humidity.
No cooling off at night; our lows at night have been above our usual average highs for this time of year.
No long sleeves or jackets ever; we have still been living in tank tops and shorts.
No leaves changing colors; everything's dried out and dying from dehydration.
It's been an extra month of full on summer.
So this is a very much anticipated, very welcomed change.

And the perfect day for baking this.

Hey Heather! Glad to hear the weather is turning into more of a true fall season for you guys! Your kitties are so cute, hope the kids are having fun with the new addition to the family. Thanks for posting your recipes, I've been cooking and baking more now and am excited to try that bread, looks yummy! I made blueberry bars today, they are a recipe from Jessica Seinfeld (Yes! Jerry's wife)who likes to hide veggies in her kids food. I couldn't even taste the green offender in the bars! You should give them a try, I put them to the test with some people from Greg's work and they didn't know until I told them. Fun to have healthy recipes that still taste yummy...
INGREDIENTS
•Nonstick cooking spray
•2 cups old-fashioned oats
•1 1/4 cups all-purpose flour
•1/2 cup sugar
•1/2 tsp. cinnamon
•1/4 tsp. baking powder
•1/4 tsp. salt
•1 tsp. pure vanilla extract
•3/4 cup Balance trans-fat-free soft tub margarine spread, chilled
•1 cup low-sugar blueberry preserves
•1/2 cup spinach puree

Preheat oven to 375°. Coat an 8" x 8" baking pan with cooking spray.

In a large bowl, combine oats, flour, sugar, cinnamon, baking powder, salt and vanilla and stir to mix well.

Add the margarine and cut it quickly into dry ingredients with two knives until the mixture resembles coarse meal and is no longer powdery. Do not overmix—bits of margarine will still be visible.

Set aside about half of the oat mixture; press the rest firmly into the pan. Bake until lightly browned at the edges (but not fully baked), 13 to 15 minutes.

Meanwhile, mix the preserves with the spinach puree in a small bowl.

Spread blueberry mixture over the partially baked oat layer, then sprinkle with reserved oat mixture. Bake until topping is slightly browned, 20 to 25 minutes. Set the pan on a rack to cool (Let the bars cool completely before serving so that the taste of the spinach has a chance to disappear completely).

Sorry for the long post, but I figured since you asked for cookie recipes, and I don't really have any special ones, I'd make up for it here :)

Just thought I would mention that most of Libby's pumpkin (used in the recipe) is canned in my hometown, Morton, IL.

It's so funny to read about how hot it is out there, when here in Oregon we have had such an early fall. The whole summer was cool, and Sept and Oct have been downright cold. I've already started wearing my sweaters!

I hear ya...it was like 87' last weekend and 40' this week. Nothing like drastic changes in the midwest!
